“Compiling and publishing a cookbook has become a tradition at Happy Hill Church! More than just a collection of great recipes, this cookbook is also filled with memories!”

Established by farmers and ranchers in the early 1900s, Happy Hill Church of Ramona, Oklahoma, continues to thrive and grow. Its Ladies Ministries of Service (LMS) has played a large role in that growth.
Once deemed a “country church by the side of the road,” Happy Hill Church has expanded through the fundraising efforts and support of missions by the LMS. Over half a million people have attended services.
“We feel our cookbook reflects the times of a country church flourishing in a changing world,” said Peggy Stiles, LMS cookbook coordinator.
Their first cookbook was published in 1985. It proved to be a success, and the decision was made to publish a new edition every 10 years. “We sell them at church but when people find out about them, we have many who order by mail,” she said.
All three cookbook editions have been published with Cookbook Publishers. “The quality is far nicer than other cookbooks we’ve seen, and these books have been so very well received! While the 1985 edition is a treasured keepsake for those fortunate enough to have one, many feel that the 2005 edition is our best ever!” she added.

“Recipes started coming in, and I volunteered to organize the recipes for publication,” Peggy said. “There are over 800 recipes in our third edition! We set a goal to meet the July 31 deadline to take advantage of the per book discount offered that month.”
More than just a fundraiser, the cookbooks of Happy Hill have been a means of fellowship and celebration of history.
As shared in their third edition, “Happy Hill Church was named for the happiness reflected in its early members. That happiness, plus their renowned cooking, is our heritage today.”

Featured Recipe:
Southern Pecan Pie
1/2 c. brown sugar
1/2 c. white sugar
1 1/2 Tbsp. flour
1/4 c. melted butter
1/4 tsp. salt
1 c. white corn syrup
3 eggs
1 tsp. vanilla
1 to 1 1/2 c. pecans
1 unbaked pie shell
Mix sugars and flour thoroughly. Beat eggs slightly. Blend in melted butter, salt, sugar mixture, and syrup. Add vanilla. Place whole pecans in pie shell and pour mixture on top of them. Bake at 375 degrees F. for 10 minutes. Reduce heat to 350 degrees F. and bake an additional 50 minutes or until set and not shaky.
Pumpkin Pie Cake
4 eggs
1 1/2 c. sugar
12 oz. can evaporated milk
1 tsp. cinnamon
16 oz. can pumpkin
1 yellow cake mix
1 c. melted butter
1 c. chopped pecans
Cool Whip
Mix eggs, sugar, milk, cinnamon, and pumpkin. Pour in greased and floured 9x13 inch pan. Sprinkle a package of dry yellow cake mix on top. Drizzle with one cup melted butter and top with one cup of chopped pecans. Bake one hour at 350 degrees F. or until knife inserted in center comes out clean. Top with Cool Whip.
Santa Fe Soup
1 lb. ground chuck
1 (28 oz.) can crushed tomatoes
1 can Ro-Tel tomatoes
1 can whole kernel corn (not drained)
2 cans pinto beans (not drained)
1 can kidney beans (not drained)
1 pkg. taco seasoning
1 pkg. dry Ranch dressing
Brown and drain ground chuck. Add all other ingredients and put into crock pot on LOW all day. Serve with cornbread
