St. Teresa's Academy

St. Teresa's Academy was established in 1866 by the Sisters of St. Joseph of Carondelet. The independent college preparatory school is committed to the education of young women.

Considered the oldest school in the Kansas City area, its longevity in the community provided a wealth of recipe contributors. "We wanted to give our alumnae and friends an opportunity to play an active role in an important fundraiser for our school," said Jennifer McBratney, St. Teresa's Academy alumnae director. Funds generated from the cookbook sales are used to provide scholarships.

St. Teresa's Academy cookbook organizers credit success of the cookbooks to:

  • Large collection of favorite recipes

  • Organization of the book into 11 categories for ease in locating recipes

  • Manner in which submitters are recognized

  • Design options selected

Mailings played a key role to ensure that recipes from alumnae no longer residing in the area were also included. "Our cookbooks are loved because they are a collection of everyone's favorite recipes," Jennifer said. Submitters were recognized immediately following their recipe, including their year of graduation. Special pages at the front of the book included an alphabetical listing of submitters, as well as a listing of parents, their daughters, and years of graduation.

The academy's first book was published in 1994. The cookbook was personalized with a customer designed cover, color, and binding. "The first edition was so well loved, we kept the same look for our second edition and titled it 'Academy Award Winners: Act II,''' Jennifer added.

"We have large numbers of community residents who will write to order a copy of our cookbook, but we also make sure to have them on hand for purchase at academy events, such as Homecoming," Jennifer said.

As noted by President Sr. Suzanne Gilbert in the 1994 cookbook: "In accordance with the French heritage of the Sisters of St. Joseph of Carondelet, I wish you and those with whom you share these recipes 'bon appetit.' May they be a source of blessing to you as you have been to us."

Greatest Cinnamon Rolls Ever Rolled

1 box yellow cake mix
2 pkg. dry yeast
1 tsp. salt
2 1/2 c. lukewarm water
1 tsp. vanilla
5 c. flour
1/4 c. melted butter or oleo
3/4 c. sugar
3/4 c. brown sugar
4 Tbsp. cinnamon

Powdered Sugar Frosting

1 lb. powdered sugar
Milk or half & half

Dissolve cake mix, yeast, and salt in water; add vanilla. Mix in about 5 cups of flour. Leave in bowl to raise 1 hour. Roll out on floured board in a rectangle. Spread dough with 1/4 cup melted butter or oleo. Mix together 3/4 cup sugar, 3/4 cup brown sugar, and 4 tablespoons cinnamon. Sprinkle over dough; use it all. Some will melt into the butter as you sprinkle. Roll up dough tightly into a long roll. Cut rolls approximately 1 inch thick. Place in greased oblong pan. Let raise 45 minutes; they will raise more while baking. Bake in 350 degree oven for 15 to 20 minutes.

Frost with Powdered Sugar Frosting: Powdered sugar mixed with enough milk or half  & half to make a creamy consistency, usually a 1 pound package is enough. Ice these while slightly warm.

Nina Taylor's Ham Sandwiches

1 tray frozen or fresh rolls, sliced in halves
1/2 c. butter or mayonnaise
1 Tbsp. yellow mustard
1 Tbsp. grated onion
1/2 tsp. poppy seeds
Ham slices
Swiss cheese, grated

Mix butter (or mayonnaise), mustard, onion, and poppy seeds together. Spread on each half of rolls. Layer ham slices and grated cheese. Top with other half of bread. Bake covered at 350 degrees for 10 to 15 minutes (until cheese melts).

Almost Robert Redford

1 c. flour
1 stick soft margarine
2 Tbsp. sugar
1/4 c. crushed nuts
1 (8 oz.) cream cheese (room temperature)
2/3 c. confectioners sugar
Large Cool Whip
2 boxes instant chocolate pudding
2 1/2 c. cold milk
Nuts (optional)

First layer: Mix flour, margarine, sugar, and crushed nuts into 9x13 inch pan. Bake at 350 degrees for 10 minutes. Cool.

Second layer: Mix cream cheese, confectioners sugar, and 1/2 of large Cool Whip; spread on top of first layer.

Third layer: Mix chocolate pudding and milk; spread on top of second layer.

Fourth layer: Spread remainder of Cool Whip on top. Sprinkle with crushed nuts. Refrigerate about 4 hours
